Since this recipe doesn't have leaven, you might want to make them during Pesach too, imagine, Laktes for Pesach!
2 LARGE PEELED RUSSET POTATOES 1 LARGE EGG 1 TABLESPOON WHOLE WHEAT FLOUR OR MATZO MEAL SALT/PEPPER TO TASTE, PEANUT OIL APPLE SAUCE AND/OR SOUR CREAM
Using largest hole in grater, grate potatoes into large bowl, sprinkle flour or matzo meal over potatoes, and salt and pepper, mix well with fork, break egg into potatoes and mix with fork.
put oil in skillet, about 1/2 inch in depth, heat slow, spoon latke mix into hot oil, and push down with spoon to make flat, fry until golden brown on both sides, place on towels to absorb excess oil, serve with apple sauce and/or sour cream.
